- 1/2 cup shredded sharp cheddar cheese
- 1/4 teaspoon fine salt
- Pinch of black pepper
- Fresh chives, roughly chopped (optional, for garnish)
Instructions
- Prepare the Baking Pan:
- Lightly mist a silicone muffin pan with cooking spray.
- Preheat the oven to 350°F (175°C).
- Blend the Ingredients:
- In a blender, combine eggs, cottage cheese, cheddar cheese, salt, and pepper.
- Blend until smooth to create a fine, even batter.
- Fill the Muffin Cups:
- Divide the egg mixture evenly among the muffin cups, filling each about halfway.
- Sprinkle with chopped chives or additional mix-ins like vegetables or bacon, if desired.
- Bake:
- Place the pan in the oven and bake for 20–22 minutes, or until the egg bites are slightly firm to the touch.
